For bookings, when no product / pricing  is involved

If you put an email address in the "Enquiry email" box, and set the Enquiry Form option to be No Enquiry form, then the booking confirmation will be sent only to the coach/teacher/point of contact for the specific event.
If you want an site administrator to be notified, add the administrator to the  page options notification address.

When Products / Pricing is involved

When products are involved, then the ordinary order/invoice email is sent, and that is not event specific, as it can cater to several events.
